Easy Perogi's...this recipe came from my mother in-law, Cil and is super easy. Of course you can substitute the boxed potatoes for real and make your own noodles, but I like this for a fast night.
Ingredients:
1 box of lasagna noodles
1 box (2 packages) of Betty Crocker Butter Mashed Potatoes
8oz of Colby Jack Shredded Cheese
1/2 stick of butter
1/4 onion
Recipe:
1. Boil noodles
2. Preheat oven to 350
3. Make mashed potatoes as directed
4. After mashed potatoes are done, add cheese and stir until melted into the potatoes
5. Layer the lasagna noodles and potatoes (with a small amount of poatoes on the bottom of the pan, and thicker layers in between the noodles, ending with a small amount of potatoes on top). I usually make this in a 9X13 pan
6. Bake for about 10 minutes
7. Melt butter, then sprinkle over the top of the potatoes as served.
8. If you like onions, saute the onions while baking the Perogi, then add that to the butter as you serve each piece.
