Blueberry Brunch Cake...this recipe came from my book club friend and baker, Leona
Ingredients:
Cake
A.
1 1/2c flour
1tsp baking soda
1/4tsp salt
1/2c sugar
B.
1 large egg
1c light sour cream (can also use vanilla yogurt instead)
2tbs veg oil
1tsp vanilla extract
1c fresh or frozen blueberries, rinsed and drained
Topping
1/2c flour
1/4c brown sugar
2tbs butter softened (do not melt)
1tsp ground cinnamon
Directions:
1. Preheat oven to 350
2. Coat 8X8 dish with nonstick spray
3. Combine A ingredients in a medium bowl
4. Combine B ingredients in a mixer
5. Add A ingredients just until moist using a spoon, not the mixer
6. Stir in blueberries
7. Spoon into baking dish
8. Mix topping using a fork until it resembles coarse crumbs and sprinkle over cake
9. Bake for 40-45 minutes
Note, don't cover while warm, moisture messes up crumbs
